
Preheat the oven to 350 degrees.
In a food processor combine and blending until smooth:
- 1 1/2 cup fresh spinach
- 2 cans artichoke hearts (drained and rinsed well)
- 1 cup shredded skim mozzarella cheese
- 1/4 cup shredded Parmesan cheese
- 1 tsp fresh crushed garlic
- 4 sun dried tomatoes
- 1/4 tsp pepper
- 1/2 tsp lemon juice
- 1/4 tsp dried chili pepper flakes (optional)
- 1 tsp Worcestershire Sauce (optional ~ note Worchestershire Sauce is not friendly for your vegetarian friends)
- 1/4 cup shredded Parmesan cheese
Serve with whole grain, low sodium crackers or lightly toasted pita bread. You can also spread it into a wrap loaded with veggies, dip baby carrots, or spread onto your burger bun for a delish and nutrient packed alternative to other condiments!
